Preparing for Thanksgiving

Colt, Parker, Beckett and I are going to the beach for Thanksgiving!! At Parker's school fundraiser we won a 4 night stay at the Beach! We are so excited about our first family vacation with just the four of us! I have been preparing for our trip for a few weeks now and planning our Thanksgiving menu. I am a pretty picky eater so I am pretty pumped about our Thanksgiving "feast". I have made, and froze, a green bean and rice casserole and Ganny's dressing - Ganny shared the recipe with me just for Colt and he is so excited! Tomorrow, we will keep them in the cooler on the way down and put them in the refrigerator to finish thawing out for Thursday.  I have also prepared some ingredients for the other things I will be cooking on Thursday.  We will have to go to the store when we arrive but I am trying to make everything as easy and organized as possible.

Menu
Pumpkin Muffins - Breakfast
Turkey
Dressing
Green Bean and Rice Casserole
Homemade Yeast Rolls 
Pumpkin Parfaits - Dessert  

Side note: Both casseroles were really big so I split each casserole into two containers and froze them as well. Now we can have a "Thanksgiving" meal in a few weeks when I am not in the mood to cook dinner! This is a great idea for anyone cooking for two, you don't end up with ton of leftovers and you have a whole side dish or meal in the freezer for another day.
